中国人早有将酒温热了饮用的习惯。商周的青铜酒器中，就有用于温酒的器皿。晋代文人左思（约公元250-305年）在《魏都赋》中有“冻体流澌，温酎跃波”的文句，明确说到温酒。《三国演义》中多次写到“煮酒”、“热酒”，都是将酒温热了喝。这种做法，一直延续到今天。   将酒温热了喝，应该说是一种很好的做法。无论黄酒或白酒，温热以后，不仅会使一些酒的味道更鲜美，且对身体也有好处。著名的古典小说《红楼梦》第八回中有一段关于饮热酒的描写：   这里宝玉又说：“不必烫暖了，我只爱喝冷的。”薛姨妈道：“这可使不得，吃了冷酒，写字手打颤的。”宝钗笑道：“宝兄弟，亏你每日家杂学旁收的，难道就不知道酒性热，要热吃下去，发散的就快，要冷吃下去，便凝结在内，拿五脏去暖他，岂不受害？从此还不改了呢。快别吃那冷的了。”宝玉听这话有理，便放下冷的，令人烫来方饮。   这段描写，至少代表了一部分中国人对饮热酒好处的认识。其实酒温热以后，一部分乙醇（酒精）会挥发掉，酒度降低；白酒中的有害成分，如乙醛，也可能挥发掉一些，从而减少对身体的危害。   俗话说：“喝冷酒，睡凉炕，早晚是个病。”确有一定的道理。
